Quince is a type of pome, used to make jam and quince pudding. It is also the tree that bears the fruit. The term marmalade, originally meaning a quince jam, derives from the portuguese word for this fruit marmelo. The fruit, like so many others, can be used to make a type of wine. The fruit has a pleasing odor and flavor but is very astringent, so is almost never eaten raw, but in a variety of cooked and sugared forms.
